Having tea parties was one of the favorite things I loved doing with my girls. Each of the girls had their own tea set; I would fill their pots with tea, pour a little cream in their pitchers, and of course add a little sugar to their sugar pots. The best tea parties need a little something good to eat at them. I know we sure enjoyed having cookies at our parties.
I'd like to believe the perfect tea party begins with getting out your fanciest tea service!
Make some yummy cookies; like these biscottis I'm giving you the recipe for. I adapted it from my Great Grandmother's recipe for Wine Cookies, a.k.a Biscotti.
Lemon, Almond and White Chocolate Biscotti
1/2 cup unsalted butter, softened
1 cup granulated sugar
3 large eggs
3 cups all-purpose flour
1 tbsp. baking powder
2 tbsp. lemon juice
1 tbsp. lemon zest
1/2 cup chopped toasted almonds
1/2 cup white chocolate chips
1/8 tsp. salt
1/2 cup white chocolate chips for melting
1/2 cup white chocolate chips for melting
In a bowl combine butter, sugar, eggs, flour, baking powder, lemon juice, lemon zest, almonds, white chocolate and salt. Stir to combine.
Divide the batter into 3 equal pieces. Shape the mixture into a rectangle and place on a baking sheet lined with parchment or a silpat mat. The dough is a little sticky, so shaping it on the silpat works good. If the dough is sticking to your hands, you can also wet your hands and run them over the loaves. They spread quite a bit so you will want to spread them out on the pan a little more than I did.
Bake in 350 degree F oven for 25 minutes, let cool for 15-20 minutes. Slice loaves into 1/2" slices and place back on baking sheet, cut side down and bake in 325 degree F oven for 10-15 minutes longer.
In a small heatproof bowl add white chocolate chips and melt in double boiler or microwave. Dip bottoms of cooled cookies in white chocolate and place on a sheet of parchment until chocolate is set up.
